First created in 1979, Etorki is a pure ewe’s cheese whose Basque name means “origin”. It is made with ewe’s milk produced in the Pyrénées Atlantiques within a radius of 50 miles around the cheese dairy situated in Mauléon-Licharre.

Etorki is a great ambassador for the Basque Country, symbolising the strength and richness of its land.

Etorki smells pure and delicate, with flavours evolving during maturation, starting with dried fruit and leading on to quince paste, even going as far as subtle minerals notes.

Traditionally, Etorki is eaten with the most famous and fragrant Itxassou (pronounced “Itshassoo”) black cherry jams.
